Pistachio and Morello Cherry Cake

4 eggs, separated

135 g (4¾ oz) caster (superfine) sugar

125 g (4 oz) butter

1 heaped teaspoon pistachio paste (from a specialist grocer) or pistachio flavouring

40 g (1½ oz) ground pistachios

120 g (4 oz) plain (all-purpose) flour

pinch of salt

500 ml (17 fl oz) milk, at room temperature

200 g (7 oz) fresh morello cherries, stones removed (can also use tinned or jarrred cherries)
